I have been with Red Carnation Hotels for over 20 years and my role as Managing Director (The Rubens, Hotel 41, bbar, 100 Princes Street) is one of the most satisfying jobs of my career. I have a team of over 250 employees, who are highly motivated and dedicated to delivering generous hospitality and passionate service. The wellbeing of our guests and teams is my highest priority and I look forward to warmly welcoming you to 100 Princes Street very soon.

My journey with Red Carnation began in 2015 with their renowned Management Programme. I was then fortunate to spend the first seven years of my career at the prestigious Ashford Castle where I was the Guest Services Manager, after which, I moved to London as Rooms Division Manager for The Rubens at the Palace. Opening 100 Princes Street as Hotel Resident Manager is a huge honour and I am so excited to lead a team that shares my vision of providing unparalleled guest experiences.

Gill Mabbett joined Red Carnation Hotels as Director of Sales for Guernsey representing the Old Government House and Duke of Richmond Hotel in July 2019. Loving the variety of the role working with the corporate and leisure industries and as a Scot, born in Fife, it's a dream come true to add 100 Princes Street to her portfolio and she looks forward to developing new relationships in Edinburgh.

I started my career as a trainee chef at De Volkskombuis where I spent seven years working my way up to assistant General Manager. In 2021 I returned to Bushman’s Kloof Wilderness Reserve and Wellness Retreat after 20 years as Executive Sous Chef and later that year as the Executive Chef. I am excited to be the Executive Chef at 100 Princes Street in the heart of Edinburgh and look forward to working with some of the best locally sourced produce, especially the seafood and Scottish beef.

I began my journey with Red Carnation in September 2019 as part of the Management Programme, I have had the pleasure of working at three of our magnificent properties across the UK where I have continued to develop my career. This has led me to the exciting role of Food and Beverage Manager for Scotland's first Red Carnation Hotel, 100 Princes Street. An opportunity which I believe, will be one-of-a kind in offering our guests genuine, passionate and warm hospitality in the heart of Edinburgh.

I began my journey with Red Carnation at the world-famous Ashford Castle, where I worked as the Estate & Activities Manager for six years. I am thrilled to return to my homeland of Scotland to be the Guest Services Manager at 100 Princes Street, as we craft unforgettable moments, embrace diverse cultures, and celebrate the spirit of hospitality in the heart of Scotland.
