Managing Director

The epitome of a ‘people person’, Malcolm Hendry is dedicated to providing guests with authentic experiences. Malcolm began his hospitality career as a kitchen porter in Aberdeen. After swiftly working his way through the ranks, he became deputy GM of Speyside’s Craigellachie Hotel. By 2004, Malcolm was General Manager of The Rubens at the Palace, Hotel 41 and bbar. Today he oversees these and 100 Princes Street and is driven by Forbes Five-Star standards.

Laura Jamieson

General Manager

Laura began her Red Carnation journey in 2015 on the group’s Management Programme. She spent the following seven years at the multi award-winning Ashford Castle, where she thrived as Guest Services Manager, looking after both international and returning guests. Laura then led the pre-opening team at 100 Princes Street as Resident Manager, before progressing to General Manager and continuing her passion for first-class service and genuine hospitality.

Michael Smith

Head of Client and Guest Relations

World-famous Ashford Castle is where Michael began his Red Carnation career, joining the estate as Activities Manager – a dynamic role in which he shone for six years. He was thrilled to return to his homeland of Scotland as Guest Services Manager at 100 Princes Street, before receiving a well-deserved promotion to Resident Manager, working alongside Laura Jamieson. He now leads the hotel’s guest journey as Head of Client and Guest Relations.

Wilhelm Maree

Executive Chef

A talented, motivated and innovative culinary creator, Wilhelm began his career as a trainee chef at historic De Volkskombuis in Stellenbosch, where he spent seven years creating a wealth of classic South African cuisine with contemporary flair in the process. Shortly after, he returned to Bushmans Kloof, part of The Red Carnation Hotel Collection. Excited to be 100 Princes Street’s Executive Chef, Wilhelm strives to produce delicious hearty fare with a modern twist.

Rory McKinnon

Food & Beverage Operations Manager

Rory began his Red Carnation journey in 2019 on the group’s Management Programme and has since worked at three of the group’s UK properties. Constantly honing his talents and excelling along the way led him to 100 Princes Street, where he manages the operations side of the hotel’s food and beverage division, and strives to offer guests genuine, passionate and warm hospitality, with attention to detail being paramount to Rory.

Willian Lattuca

Maintenance Manager

Willian has been with Red Carnation Hotels for several years now, bringing a wealth of experience in property maintenance. Before joining the team at 100 Princes Street, Willian worked at The Duke of Richmond in Guernsey, overseeing the building’s maintenance operations. With a strong commitment to excellence, Willian ensures that 100 Princes Street remains in top condition, delivering exceptional service to both guests and team members.

Sarah Bristow
